Because the edges of the subway tiles are curved the light comes with a shadow and a three dimensional effect.

As everyone who has lived with old floor tile knows when grout ages it will end up a dull dirt color so if you can be content with something close to that from the start on your floors you will save yourself some grief.
Choosing a grout that is darker in color helps conceal dirt and is less likely to change in color as quickly as a light colored grout.
